Bacon Cheeseburger Meat Loaf
Submitted by Kim Herron
8 ounces grated cheese
2 eggs, beaten
¼ cup mayonnaise
¼ cup toasted bread crumbs
1 tablespoon Worcestershire sauce
2/3 cup ketchup
2 tablespoons mustard
2 tablespoons brown sugar
1 pound ground meat
10 slices bacon, cooked and crumbled
1 (2.8 ounces) can French's fried onion rings
Layer a 9 by 13-inch casserole dish with 3 slices of bread to soak up grease that cooks out of the meat loaf. In a large bowl, place cheese, eggs, mayonnaise, bread crumbs and Worcestershire sauce. Mix together, and then add meat, mixing with hands. Combine the mustard and ketchup (reserving 1/3 cup for meat loaf topping) and add this to the meat mixture. Add crumbled bacon and mix well. Form into a loaf and place on top of the bread slices in the casserole dish. Add the 2 tablespoons of brown sugar to the reserved 1/3 cup ketchup-mustard mixture; put on top of the meat loaf. Bake at 350 degrees for 30 minutes. Remove from oven and place onion rings on top. Continue baking for 10 to 15 more minutes.
